Make your own bread dumplings

South Tyrolean Dumplings: Insider Tips for Making Them at Home

I’m craving delicious dumplings. The trouble is, I’m sitting in the middle of Germany. The mountains feel impossibly far away. South Tyrol is several hours away by car. But still, that’s exactly what I’d love to eat right now. To help satisfy my craving for traditional dishes at home, Raphael (a loyal YouTube subscriber) emailed me the authentic recipe from his homeland.

But it would be such a shame to let the recipe sit in my inbox. Maybe you’ll find yourself craving delicious South Tyrolean bacon dumplings too. So head to the kitchen and have fun making them! 🙂

Thank you Raphael!

Ingredients (for 2 servings)

  • 250 g small white bread cubes
  • 4 eggs
  • Salt
  • 1 medium onion
  • 1 cooked sausage
  • Some type "0" wheat flour
  • Bunch of parsley
  • Bunch of chives
  • 5 thick slices of bacon (approx. 5mm)
  • 1/2 stock cube
  • 1 large glass of water
  • Leafy salad

Preparation

1. Dice the onion and sauté in butter in a frying pan until translucent.

2. Cut the sausage, bacon and parsley into small pieces and put them in a bowl with the bread cubes, eggs and salt.

3. Add the sautéed onions and mix everything together.

4. Add a little water and a tablespoon of flour to the mixture and knead well. Add more water and flour. Continue until the mixture is firm and no longer sticks to your fingers.

"Shape the dumpling mixture into a large ball and leave it to rest under a clean tea towel for 15 minutes."

INSIDER TIP from Raphael

5. Bring a pot of water with a little salt to a boil.

6. Use both hands to shape the mixture into evenly sized dumplings. It’s best to keep a bowl of lukewarm water nearby and moisten your hands before shaping each one.

7. Cook the dumplings in the hot water for about 15 minutes.

8. Add finely chopped chives to the boiling dumpling water.

"Cut the chives with scissors. If you chop them with a knife on a cutting board, a lot of their flavor is lost."

INSIDER TIP from Raphael

9. For even more flavor, add half a stock cube to the simmering water.

10. Serve with a green salad on the side.

"If you’ve made too many dumplings, you can freeze the uncooked dumplings in a freezer bag, then thaw and boil them as usual another time."
